Ingredients
- 3 c. sliced peaches
- 2 c. raspberries
- 1 c. blackberries
- 3/4 c. granulated sugar
- 3 tbsp. cornstarch
- Juice and zest of 1/2 lemon
- 1 tsp. pure vanilla extract
- Pinch kosher salt
- 1 c. all-purpose flour
- 2 tbsp. granulated sugar, plus more for topping
- 2 tsp. baking powder
- 1/4 tsp. kosher salt
- 1/2 c. (1 stick) butter, cold, cut into 1/2″ pieces
- 1/2 c. buttermilk
- 1 tsp. pure vanilla extract
- Vanilla ice cream, for serving
Directions
- Build a strong fire and lower the grill grate.
- Wash and dry all produce.
- Peel and thinly slice the peaches.
- In a large bowl, toss the peaches, berries, sugar, cornstarch, lemon juice and zest, vanilla, and salt.
- Stir until combined and add to the cast-iron skillet.
- In another bowl, whisk the flour, sugar, baking powder, and salt together.
- Cut the butter into 1/2″ pieces and add to the dry ingredients with your hands.
- Once the butter is somewhat broken down and about pea-sized, add buttermilk and vanilla until just combined.
- Add the dough to the top of the fruit in dollops and top with sugar.
- Cover the cast-iron skilled with foil or a lid and add to the grill grate to cook for 20 minutes or until the dough is cooked through and the berries are reduced and thickened.
- Serve with a scoop of ice cream on top.
